TASTING NOTES
Piano Método Clássico Brut has a delicate and persistent effervescence. Fresh aroma with floral and white fruit notes and a hint of toasted bread. Presents itself as creamy, with a freshness and lightness acquired by a vibrant and well balanced acidity. Elegant flavoursome finish.
VINEYARD
The grapes come from vineyards situated in the heart of Douro Valley, with different solar expositions and altitudes to better reflect all the potential and versatility of our terroir.
WINEMAKING
It occurred on the first 2 weeks of September. On arrival to the winery, the grapes are immediately protected from oxidations. After being totally destemmed, they are transferred to the pneumatic press where are gently pressed. The grapes must is decanted for 24 hours until it reaches the desired turbidity. Afterwards, the wine is separated from the lees which have formed a clean must. The must is inoculated with a selected range of yeasts for added complexity and aromaticity during fermentation. This process took 15 days with a controlled temperature at 14°C. The wine is stabilized, clarified and bottled, proceeding its second fermentation in bottle (classic method).
MATURATION
After the second fermentation, a maturation of 12 months has enhanced its freshness and aromaticity of excellence.
STORAGE
Keep stored in a cool, dry place, away from the light.
SERVING TEMPERATURE
Should be served between 6ºC – 8ºC.
PAIRING SUGGESTIONS
Perfect aperitif to celebrate the special moments, accompanied by oysters, goat cheese, sushi, smoked salmon or to finish with a dessert or fresh fruit.
