Taste: Elegant in the mouth, good acidiy and a marked structure, eith a long finish.
Vinification
The process is made variety by variety. Antão Vaz grapes are destemmed, softly crushed in vacuum. After setting the fermentaion takes place at controlled temperature between 10º to 12ºC. Arinto grapes are destemmed and sent, without being crushed, to “vinimatics”, undergoing pelicular maceration for 6 to 10 hours. Then they are pressed and sent to the cold chamber.
